Righteous Rojo. The namesake for this site. The “mother” sauce of Italian-American cookery. The most important and versatile of all sauces. If there is one recipe I publish that I sincerely hope you try and make and master it is this one. That said, a good rojo is more about feel than following an exact recipe or formula, but this is a good baseline to send you on your way to righteousness. As with anything, fresh and in season tomatoes work best, but since the need for Rojo extends all seasons, the canned varieties work as well.

INGREDIENTS

6 lbs ripe fresh tomatoes or 4 28oz cans whole peeled tomatoes
6 oz tomato conserva or 6oz can tomato paste
1.5 cup extra virgin olive oil
2 packed cups fresh basil leaves approximately 3.5 oz
1 head of garlic. peeled, halved
6 to 8 minced calabrian chilies or 1.5 tsp red pepper flakes
diamond crystal
sugar(optional)
reserve garlic(optional)
parmesan rinds (optional)
prosciutto/pancetta/guanicale (optional)
